China Zhejiang Ming Qian AN JI BAI CHA Imperial Green Tea
Vrcholná, ručně sklízená třída čínského zeleného čaje, slavného "Bílého čaje z An Ji", z rané jarní sklizně před svátkem Qing ming jie (Svátek čistoty a jasu).
Úhledný, celistvý, ručně sklízený tips s jedním lístkem, jen samovolně svinutý, nasládle, kořeněné vůně.
Nálev, uchvacující, poměrně plné, ušlechtilé, svěží, harmonicky vyvážené, velmi hladké, květově nasládlé, bylinné a zelinkavé chuti s kořeněnými tóny. Jedná se o zcela svébytný zelený čaj.
Tip na přípravu: do vyhřáté konvice vsypat 5 - 7 gramů čaje, přelít 0,3l vody o teplotě cca 80°C, louhovat 2 - 2,5 minuty, možno znovu zalít.

Čaj se vyrábí z kultivaru Bai Ye Yi Hao, jehož čerstvé výhonky jsou zcela pokryty bílým chmýřím a jsou jasně bílé barvy, sklízí se dokud postupem času (cca po 30 dnech) vlivem rostoucí teploty opět zezelenají. Podle toho se čaj nazývá "Bílý" i když se jedná o druh zeleného čaje.
Do 80. let existoval tento čaj pouze jako legenda zaznamenaná v 900 set let staré knize popisující čajový keř s listy v barvě bílého jadeitu. V 80. letech 20. století byl v okrese An Ji objeven jediný osamocený bílý čajovník, dnes známý jako "Předek bílého čaje", který byl kultivován pro komerční použití, a dále zvaný jako kultivar Bai Ye Yi Hao (doslova: Bilý list číslo jedna) se využívá k výrobě nejen An Ji Bai Cha.
Výzkumy ukázaly, že tento čajovník má nižší obsah polyfenolů a chlorofylu, což způsobuje bílé zabarvení. Na rozdíl od jiných zelených čajů, obsahuje téměř dvojnásobek amino kyselin, které potlačují tvorbu kortizolu a pomáhají zahánět stres. |
